Culinary Arts Management - Associate of Science Degree
The Associate of Science Degree in Culinary Arts Management is an 18 month comprehensive culinary arts program that prepares students for careers as chefs, chef/managers, entrepreneurs, restaurant chef/owners, and other culinary outcomes.
Students learn fundamental cooking techniques used by professional chefs. Professional studies include cuisines of the world, baking and pastry, meat and fish fabrication, garde manger and charcuterie, and food safety and sanitation. Students learn principles of entrepreneurship, food service profitability, menu planning, quantity food production and kitchen management. The capstone course is a fine-dining restaurant laboratory where students are required to successfully produce nutritious, attractive and timely work to a professional standard of quality.
The program features a comprehensive culinary curriculum as well as modern management techniques, and offers a solid foundation in liberal studies. The instruction is enhanced by two eleven week, 360 hour paid internships.
